An easy must- make dinner the entire family will love

This is such a ridiculously easy, delicious meal to make- you have to try it! I lightened my old version up by excluding the mozzarella I used to stuff in the middle and replaced it with a dash of grated parm.


Start by salt and peppering your cutlets on both sides. Lay the cutlets flat out placing a handful of baby spinach on one side as shown below. Sprinkle with the grated parm. Simply cover the spinach with the other side of the chicken.

I sprinkled a bit more grated parm on top and added some additional pepper before baking.
Bake in the oven for one hour on 350. I paired it with baked sweet potatoes. Hardly any clean up- and I promise this is a crowd pleaser!
