My friend Gina of Skinnytaste made breakfast cookies and I was intrigued! I attempted making them but was missing the chocolate chips that the recipe called for. In place of the chocolate chips I used peanut butter- but it just didn't do it for the cookies! I was determined to make such a simple breakfast, so I got crack-a-lackin and came up with these oatmeal bars.
My husband ate 3 of these yesterday- this proves how good they are! Normally, he's not one for my healthy antics! Chloe had hers on our morning walk to school and loved the chocolate chips- she is my daughter after all!
You can mix it up and throw in some raisins or craisins in place of the chocolate chips. In my house- chocolate prevails all!
Oatmeal on the Go
Ingredients:
- 1 cup of quick oats (I used Quaker Oats)
- 1 ripe (the blacker the better) banana
- 1/2 cup of canned pumpkin
- 1/4 cup of Hershey's semi-sweet chocolate chips
- 1/2 tsp cinnamon
Directions:
Pre-heat oven to 350° F.
Spray an 8.5 inch loaf pan with cooking spray.
Mash the banana together with the pumpkin and add in the cinnamon.

Combine wet mixture and oats in a bowl and fold in the chocolate chips.
Spread the oatmeal on the bottom of the loaf pan until it fills the bottom. Using your fingers or the back of a spoon, press down gently to smooth out the mixture.
Bake for 15 minutes.
Let them sit before taking them out to cut into bars.
The oatmeal will easily come out in one piece. I let mine sit for an hour before removing it from the pan. I cut them into bars using a large knife on a cutting board.
Makes 4-5 oatmeal bars.
