Whole wheat blueberry yogurt muffins!

Valentines Day couldn't have come at a better time for me this year! It's helping me to get out of my blogging funk that was caused by a mixture of a graduate class from HELL and Hurricane Sandy. We finally got a check from our insurance company- so work can resume on our home. I ended up with a B in my class and am now onto my last grad class! Yay for me!

Valentines Day was never my favorite "holiday". I always felt it put too much pressure on relationships and the need to have to go out to eat on such a ridiculously crowded night! Did I mention I hate getting flowers? For some reason, me telling this to my husband hasn't resonated in the 12 years we have been together!

Since having Chloe & Max, I have rekindled the romance with Valentine's Day! I cant get enough of heart shaped anything and my kids love it! So...I'm spreading the love to you guys as well! These muffins are yummy and so healthy! I added wheat germ because it is such a good source of so many essential vitamins and minerals and healthy fats. It is considered to be one of the top ten healthiest foods so I try to add it into anything it will work with!

                  Whole Wheat Blueberry Yogurt Muffins

1 cup whole wheat pastry flour
1 cup of raw wheat germ
1/2 cup of brown sugar
4 tsp baking powder
1 egg
3/4 cup of 2% milk
3/4 cup of Chobani non fat vanilla yogurt
1 cup of blueberries (3/4 for less blueberries- I like a lot!)

Preheat oven to 350

Mix all the dry ingredients in a bowl

Mix all wet ingredients in a separate bowl

Combine the dry and wet ingredients together.

Fold in blueberries

Bake muffins for 20-25 minutes. Check them at 20 minutes by sticking a fork in the center of one. If it comes out clean, take them out!

Enjoy & let me know how it goes! My husband even liked these & hes not a healthy eater!! hahaha (sorry babe!)

I bought this cast aluminum heartlette pan at Target. It cooked the muffins so well- it was worth every penny!

Although it is non-stick, I sprayed it with Pam before pouring the muffin batter in. They popped right out.

  1. Ooh, these look yummy AND healthy! What is the difference between the whole wheat pastry flour and regular whole wheat flour? I just bought a small bag of WWF to make pumpkin muffins, though I did find some recipes that called for the WWPF. Do you have a great pumpkin muffin recipe? :)

Love making Valentine's Day special for the kiddies.

    1. Hello there! Surprisingly, I am NOT a baker AT ALL!!! Hahaha!! I usually suck at it big time! These came out phenominal the first go!

I think if you use the regular whole wheat- it should be fine.

Thank you so much for stopping over...come again!

  5. #1 - this pan is great. #2 - I figured I'd pop back over here to respond to your blog comment. Thanks for stopping by! Things are going pretty well - just working and trying to find time to enjoy Philadelphia. I'm thinking about going to Alt Summit in NYC in June, but I still have to decide if I want to make the financial commitment. You haven't heard of any conferences in the Philadelphia area for 2013, have you? I hope that you and the family are doing well - and maybe even enjoying a snow day? Best, Chrystina
