Pack a back to school lunch with a punch!

                                   PB&H Honey & Apple Sammie



Once again- peanut butter prevails! Never in a million years did I think Chloe would eat this sandwich! The apple and honey with the peanut butter is so sweet and salty- with my first bite, I understood why she liked it so much! I'm so happy to have another great, healthy option to pack for her school lunch!

The National Honey Board was at Blogher 12 giving away many different honey products. I scored some great lip balm, honey sticks and sampled some yummy hybrid honeys! My favorite was the blueberry honey. The avocado honey...not so much! The best score? A mini honey cookbook with this sandwich in it. Luckily, I got the last one!


PB&H honey & apple sammie

8 ounces cream cheese, softened
1/3 honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup of peanut butter
1 green apple, thinly sliced

In a medium bowl, beat cream cheese until fluffy. Add honey, vanilla extract and cinnamon; mix well.

Spread the peanut butter on whole grain bread (or bread of your choice). Top peanut butter with 1 to 2 tablespoons of honey cream cheese mixture. Layer with apple slices, close sandwich with second slice of bread, cut & enjoy!

This is such a quick and simple sammie to add to your child's lunch menu!

  1. Great idea. My daughter starts school in September and I think I'm more panicked about what to pack for lunch than anything else.

    1. It's tough Melissa! Especially when they are picky like mine! I just ordered lunchbots...one of my readers recommended them. It's a stainless steel bento box container. I'm going to send in crackers, cheese & cut up fruits and veggies some days! Max is starting too!! I'm excited, upset and nervous all at once!

  2. Oh my kids loved apples and peanut butter! Great to see healthy snacks for the kids! So much better than the sugar-ladened cookies, etc in the store. Stopping in from SITS :)

  4. Man, that looks yummy. Doggone nut allergy! The Boy couldn't even come near this. I feel so badly for him, because PB is so, so good!

    1. Do it with soy nut butter! I am Healthy has a great one. I used it all year because a child had a peanut allergy in Chloe's class.

    1. I ate it right along with Chloe!! It is really good! I stored the remaining mix in a container in the fridge so it's easily accessible for the next run!!
